The Snowvillage Inn is pleased to announce that Peter Willis of Albany, NH has joined the culinary team at Max’s Restaurant & Pub at the Snowvillage Inn. Willis is well known in the Mount Washington Valley for excellence and creativity in fine dining with an emphasis on locally sourced vegetables, seafood and meats.

An outdoors enthusiastic, Chef Peter Willis grew up in Connecticut, and studied business in college. His career plans changed though, when his parents bought a cabin in New Hampshire and he started cooking there over the summer. He loved it, and soon discovered that the job found him, as it suited his lifestyle.
He honed his culinary career working at restaurants in Utah and in the White Mountains. While working at an country inn, the chef there inspired him as he had spent time in Japan and South America and he used those elements in his cooking. Chef Peter Willis started his own traveling and picking up influences along the way, deftly incorporating Asian, Southwestern, and Santa Fe elements into his culinary vision.
“Jen and Kevin, the owners of the Snowvillage Inn, embrace the community by supporting local farmers, artisans and businesses. This melds well with my vision to be in the forefront of not only what is new in food, but bearing in mind the importance of incorporating our environment and community,” says Willis.
Peter’s experience in the Valley includes The Darby Field Inn, The 1785 Inn, and his own restaurant, Coyote Rose, which proved to be a favorite of local residents and visitors alike.
Max’s Restaurant and Pub at the Snowvillage Inn is open for dinner Tuesday-Saturday serving 5:30-9 pm. Reservations are recommended at 603-447-2818.
