“What’s Your Story?” at Max’s Restaurant And Pub: Share Your Story!

Sushi 101 with Chef Kendra Stanley

Chef Kendra teaches the ancient art of sushi making from beginning to end. She will introduce the tools and basic skills of sushi making to include proper rice cooking and ingredient selection. Kendra will demonstrate her skills through hands-on approach. When learning to make sushi, you must acquire your skills through practice. You will learn the techniques required to roll some of the standards such as Veggie, California, Basic Nigiri and more.

French Onion Soup

 By Chef Steffani  

    • 3 Tbls. unsalted butter
    • 7 large yellow onions halved lengthwise, sliced 1/4″ thick
    • 1 1/2 tsp. Kosher salt
    • 2 C water
    • 1/2 C sherry (preferrably dry)
    • 5 C  chicken broth (low-sodium/low -fat ideal)
    • 1 1/2 C beef broth
    • 5 sprigs fresh thyme
    • 1 bay leaf
    •  Ground black pepper
    • Bread slices and Gruyère (or swiss) for garnish


1. Adjust oven rack to lower-half of oven. Heat oven to 400 degrees. Spray heavy-bottomed  7-quart Dutch oven with nonstick spray.  Add butter, onions and 1 tsp. salt. Cover Dutch over and cook 1 hour. Remove Dutch oven from oven and stir onions. Return to oven with lid slightly ajar and continue to cook until onions are caramelized, 1 1/2 to 1 3/4, stirring onions and scraping bottom and sides once or twice during cooking. BE PATIENT. Caramelization takes time and cannot be rushed.

2. Remove Dutch oven and place on stove-top over medium heat. Cook onions until liquid evaporates, about 15  minutes, , stirring frequently.  Continue stir until bottom of Dutch oven is coated with dark crust (6 to 8 minutes). This is called FOND. Stir in 1/4 cup water, scraping pot bottom to loosen crust, and cook until water evaporates and pot bottom has formed another dark crust, 6 to 8 minutes. Repeat process, adding 1/4 cup water, 2 to 3 more times, until onions are dark brown and water is gone. Deglaze with sherry, stirring until sherry is gone.

3. Add chicken and beef broth, 2 cups water, thyme, bay leaf, and 1/2 teaspoon salt, scraping up any final bits of browned crust on bottom and sides of pot. Increase heat to high and bring to simmer. Reduce heat to low, cover, and simmer 30 minutes. Remove herbs, then season with pepper, adding additional salt if needed.

4.  To serve: Adjust oven rack 6 inches from broiler element and heat broiler. Set individual broiler-safe crocks on baking sheet and fill each with about 1 3/4 cups soup. Top each bowl with 1 or 2 baguette slices (do not overlap slices) and sprinkle evenly with Gruyère. Broil until cheese is melted and bubbly around edges, 3 to 5 minutes.

Attitash Mountain Resort Hosting BlueberryFEST Summer Fun Event Saturday, August 4

Bartlett, NHAttitash Mountain Resort will celebrate summer when it hosts the BlueberryFEST at its Bear Peak base area on Saturday, August 4 from 2 – 8 p.m. Attitash gets it name from the region’s Native American Abenaki word for blueberry and early August is generally when New Hampshire’s wild blueberries are in full bloom. The BlueberryFEST event will celebrate summer at Attitash Mountain Resort and feature a craft fair & farmer’s market, field games, bouncy house, live music, BBQ-style food, seasonal brews, and blueberry pie baking & pie-eating contests.

The Craft Fair & Farmer’s Market portion of the event is free to the public and vendors will be located in the Bear Peak base lodge. An admission purchase will be required to access the festival area for live music and other events. The festival area will also offer BBQ-style food and seasonal, berry brews from Moat Mountain Brewery, Tuckerman Brewing Company, Woodstock Brewery, Sea Dog, Samuel Adams, & White Mountain Distributors available for purchase.

Admission rates are Adults (21+) $12; Age 6-20 $7; Age 5 & Under free. Save $2 when you buy online before the event or by presenting a valid, summer operations ticket from Attitash Mountain Resort or Wildcat Mountain purchased Saturday, August 4. A valid form of ID is required to purchase alcohol.

About Chef Adaska
Steffani began her culinary career in New Jersey at the age of 13 and has run several kitchens and catering businesses in NJ, NY and AZ. She enjoys sharing her knowledge and passion of food and has taught at King’s Cooking Studios in NJ. She has overseen the Test Kitchen for Art Culinaire Magazine and currently does recipe testing for Clean Eating Magazine.

Steffani is an active member of the ACF (American Culinary Federation), White Mountains Chapter,  the American Personal & Private Chef Association and the MWV Chamber of Commerce. She is the former Chair of Mt. Washington Valley Young Professionals, a Team Leader at Angels & Elves (Kiwanis) and Founder of MWV Hurricane Irene Relief Fund.

Steffani is a wife, a mother, an inventor, a serial entrepreneur, and Chef/Owner of Steffani Adaska Personal Chef Services. She is also chef/host of The Clean Plate w/ Steffani, a local cooking show on Valley Vision/Channel 3.

Steffani holds an Associate’s Degree in Hotel/Restaurant Management from County College of Morris, NJ and is a graduate of The Culinary Institute of American in Hyde Park, NY (May, 1993).
